Blueberry Zucchinni Bread


Yesterday I made zucchinni bread.The squash is not from our garden yet,but the blueberries were.Here is the receipe.I put the batter in several smaller pans & check more often to see if it`s done as I like to give some away to family & friends.
Zucchinni Blueberry Bread
3 eggs
2 cups sugar
1 cup oil
2 cups grated,peeled zucchinni
3 cups flour
1/4 tsp.baking powder
1 tsp.salt
1 tsp.baking soda
1 tsp. vanilla
2 tsp.cinnamon
1 cup blueberries
Blend sugar,eggs,oil.Put in dry ingred.next.Add vanilla,blueberries,cinnamon,& zucchinni last.Bake in 2 greased & floured pans{I line my pans with parchment paper so the pans aren`t hard to clean then}at 350 degrees for 1 hour.
When fresh blueberries aren`t available,I use 1 small can of crushed pineapple,drained,& 1/2 cup raisins instead.

Okay girlfriend...I went back to look at this recipe because I've been hungering for it all day...and I re-read the blueberries are from YOUR gardens.......you never cease to amaze me...never cease to amaze me...did I tell you that you never cease to amaze me!!!!!!!

the goats ate the bottom branches off the blueberry bushes so I thought I wouldn`t get many this year,but the bushes seem to have needed "the pruning".phylliso

I'm adding blueberries to the grocery list! Got to try this recipe! Lots of zucchini this year!
